Bake Away the Blues: Brown Sugar Cookies

This is the second recipe added to this series. I made these multiple times, and they come out thin, chewy and delicious. This recipe never disappoints and is a nice change from the typical white sugar cookies. These cookies helped my bad mood yesterday and hopefully you guys will enjoy this recipe as well!

Brown Sugar Cookies

Makes approximately 24 cookies.

Ingredients:

  • 1 cup Butter (2 sticks)
  • 2 cups Brown Sugar or Dark Brown Sugar (or you can use a combination of both)
  • 1 Large Egg
  • 1 Egg Yolk
  • 2 teaspoons Vanilla Extract
  • 2 1/3 cups All Purpose Flour
  • 3/4 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • Extra Brown Sugar for Rolling the Dough

Step 1: Browning the butter really gives these cookies more flavor. Firstly, in a small pot heat 1 stick of butter (1/2 cup). Let the butter simmer on medium heat for 2 minutes, stirring and being careful not to let the butter burn. Remove from heat and set aside.

Step 2: In large mixing bowl, cream together remaining butter (1 stick or 1/2 cup), browned melted butter and brown sugar with an electric mixer. Blend for 4-5 minutes until mixture is smooth.

Step 3: Carefully add in the egg, egg yolk and vanilla. Wisk together for 1 more minute.

Step 4: Switch to a large silicon baking spoon and fold in the dry ingredients; flour, baking soda and salt.

Step 5: Put the cookie dough in an air-tight container and allow to chill in the fridge for a minimum of an hour. (The chilling time is optional, but as the cookie dough chills, the sugar and butter work their magic and help the cookies taste even better!) If you can’t wait, that’s ok! I totally understand.

Step 6: When the cookie dough has chilled for the desired time, preheat the oven to 350 degrees F. Spoon ping-pong sized ball onto a baking sheet, making sure to space cookies apart because THEY WILL SPREAD OUT. If you are rolling your cookies in sugar before you bake, grab a plate and sprinkle the remaining sugar of your choice on that plate. Simply roll the balls in the sugar and place on baking sheet.

Step 7: Bake for 10 minutes. Cookies WILL SPREAD and become thin so be careful not to overbake the cookies.
